Vegan Squash and Sausage Air Fryer Lasagna
This lasagna recipe is perfect for fall! The combination of butternut squash, sage and sausages makes for the ultimate comforting pasta dish.

Ingredients
Creamy Butternut Squash Sauce
- 2 cups (280 g) butternut squash, finely diced
- 1 tablespoon (15 ml) olive oil
- 1/2 cup (60 g) finely chopped French shallots
- 2 garlic cloves, finely chopped
- 1/2 teaspoon (2.5 ml) herbes de Provence
- 1/2 teaspoon (2.5 ml) turmeric
- 1/2 teaspoon (2.5 ml) salt
- Pepper, to taste
- 1/2 cup (125 ml) vegetable cream
- 1/2 cup (125 ml) vegetable or chicken stock
Lasagna
- 1 tablespoon (15 ml) olive oil
- 3 vegan sausages, without casing
- 1 tablespoon (15 ml) finely chopped fresh sage
- 4 Oven-ready Barilla lasagne sheets
- 1 cup (80 g) grated vegan mozzarella cheese

Preparation
Creamy Butternut Squash Sauce
- Cook the squash cubes in a pot of boiling water for 8 to 10 minutes, or until tender. Drain and set aside.
- Heat oil in a non-stick frying pan over a medium-high heat and cook the shallots for 4 minutes, stirring often. Add the garlic, herbes de Provence and turmeric, then cook for a further two minutes. Transfer the shallots to a blender with the squash and the remaining sauce ingredients. Blend until smooth.
Lasagna
- Heat the oil in the same pan over a medium-high heat and cook the sausages for six minutes, breaking them up with a wooden spoon as you do so. Add the sage and cook for a further two minutes.
- Transfer to a baking dish the size of your air fryer. Spread a third of the sausages and sauce on the bottom of the dish. Add two sheets of lasagne. Add a layer of sausages, followed by a layer of sauce and cheese. Add two more sheets of lasagne, followed by the remaining sausages, then the remaining sauce and cheese. Cover with aluminium foil.
- Bake in the air fryer at 200°C for 15 minutes. Remove the foil and bake for a further 10 minutes. Leave to cool for a few minutes, then enjoy!
Note
- Since most air fryers have limited space, this recipe serves two people. However, it’s really easy to double the quantities!
