Lemon Oatmeal and Strawberry Jam
For me, an oatmeal is the ultimate comforting breakfast. I love making it in the morning because it’s quick, nutritious and the options are endless! I must say that I really have a soft spot for this one… Lemon zest and strawberries are the PERFECT combo!

Ingredients
Strawberry jam
- 2 cups (500 mL) sliced strawberries
- 1/4 cup (60 mL) honey
- 2 tablespoons (30 mL) lemon juice
Lemon oatmeal
- 1 1/2 cups (375 mL) quick oats
- 2 cups (500 mL) plant-based milk
- 1 teaspoon (5 mL) vanilla
- 2 tablespoons (30 mL) lemon juice + zest of 1 lemon, well washed
- 2 tablespoons (30 mL) honey
Toppings
- 1/4 cup (60 mL) coarsely chopped almonds
- Extra lemon zest!

Preparation
Strawberry jam
- In a saucepan, heat all jam ingredients over medium heat and cover for 5 minutes. Remove lid, increase heat to medium-high and reduce for 5 minutes. Remove from heat and let stand 5 minutes.
Lemon oatmeal
- In another saucepan, heat oats and milk over medium heat and cook for 4 minutes, stirring often. Add vanilla, lemon juice, lemon zest and honey and cook for 1 minute more, stirring often.
- Serve with jam, almonds and lemon zest.
