Grilled Chicken Sandwich with Avocado and Pesto

I’m not even exaggerating. The combination of grilled chicken, avocado, pesto mayo and apple is crazy crazy crazy!!!!

Ingredients
Pesto Mayonnaise
- 1/3 cup (80 ml) mayonnaise
- 2 tablespoons (30 ml) homemade or store-bought pesto
- 1 tablespoon (15 mL) lemon juice
- Zest of 1/2 lemon
- 2 teaspoons (10 mL) honey
- 1/2 teaspoon (2.5 mL) salt
- Pepper, to taste
Grilled Chicken Sandwich
- 1 tablespoon (15 mL) olive oil
- 2 chicken cutlets, seasoned with salt and pepper
- 4 slices of bread
- 1 avocado, sliced
- 1 apple, sliced
- 1 cup (250 ml) watercress
- Honey drizzle

Pesto Mayonnaise
- In a small bowl, combine all ingredients for the pesto mayonnaise.
Grilled Chicken Sandwich
- In a nonstick skillet, heat olive oil over medium-high heat and brown cutlets for about 1 minute per side. Cover the pan and cook for a further 7 minutes, or until the cutlets are done.
- Spread the inside of the loaves with pesto mayonnaise. Garnish with avocado, chicken, apple slices and watercress. Finish with a drizzle of honey. Close sandwiches.
