Crab Croquettes with Tarragon and Aioli
I recently took a trip to the Lower St. Lawrence region, where I was lucky enough to sample crab in all its forms. The freshness of the crab really impressed me and inspired this recipe!
These crab croquettes with tarragon and smoked paprika aioli are simply delicious!

Ingredients
Crab Croquettes
- 600 g crab meat
- 1/3 cup (70 g) light or regular mayonnaise
- 1 tablespoon (30 ml) Dijon mustard
- 1/4 cup (8 g) finely chopped fresh tarragon
- 1/2 cup (40 g) panko breadcrumbs
- 1 egg
- Zest of 1 well-washed lemon
- 1 tablespoon (15 ml) lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon (1.25 ml) hot pepper flakes
- 1/4 teaspoon (1.25 ml) salt
Aïoli with Smoked Paprika
- 1/2 cup (115 g) light or regular mayonnaise
- 2 tablespoons (30 ml) lemon juice
- 1 teaspoon (5 ml) paprika
- 1/2 teaspoon (2.5 ml) smoked paprika
- 1 teaspoon (5 ml) honey
- 1 clove garlic, finely chopped
- 1/4 teaspoon (1.25 ml) salt

Crab Croquettes
- Preheat oven to 425°F and place the rack in the centre. Line a baking tray with parchment paper.
- In a large bowl, gently combine all the ingredients for the croquettes.
- Shape the mixture into 3 tbsp (15 ml) croquettes and place them on the baking sheet. Bake for 20 minutes.
Aïoli with Smoked Paprika
- Mix all the aioli ingredients together in a bowl. Serve with croquettes!
