Spicy Tomato Pasta with Crispy Chicken

I couldn’t wait to share this pasta recipe with you! The tomato sauce is super simple and tasty, but the star of the recipe is the crispy chicken cutlets! I’m not going to hide the fact that this recipe takes longer than my usual recipes, but believe me, it’s well worth the effort.

Ingredients

Crispy chicken

  • 4 chicken cutlets (about 425 g)
  • 1/2 cup (125 ml) flour
  • 1 egg
  • 1 1/3 cups (330 ml) Panko breadcrumbs
  • 3/4 teaspoon (3.75 ml) salt
  • 3 tablespoons (45 ml) oil, for frying (or more if needed)

Pasta

  • 2 tablespoons (30 ml) olive oil
  • 3 garlic cloves, minced
  • 1/2 teaspoon (2.5 ml) hot pepper flakes
  • 1 teaspoon (5 ml) herbes de Provence
  • 1 can 540 ml crushed tomatoes
  • 3/4 teaspoon (3.75 ml) salt
  • Pepper, to taste
  • 400 g long pasta of your choice
  • 1/2 cup (125 ml) cooking water
  • 1 cup (250 ml) coarsely chopped fresh basil

Preparation

Crispy chicken

  • Pour the flour into a shallow dish. In another shallow dish, lightly beat the egg. In a third shallow dish, combine the Panko breadcrumbs, paprika and salt.
  • Coat chicken cutlets with flour. Shake off excess. Dip in egg and drain lightly. Press into breadcrumb mixture to coat well. Set aside on a plate.
  • In a large nonstick skillet, heat oil over medium-high heat. Cook chicken cutlets two at a time, 2 to 3 minutes per side, or until golden brown and cooked in the center. Add oil as needed to cook remaining cutlets. Set aside on a wire rack.

Pasta

  • In a Dutch oven, heat olive oil over medium-high heat and cook garlic, hot pepper flakes and herbes de Provence for 2 to 3 minutes, stirring often. Add the crushed tomatoes, salt and pepper and cook for 8 minutes, stirring occasionally.
  • In a pot of boiling salted water, cook pasta according to package instructions. Remove 1 cup (250 ml) of cooking water. Drain pasta.
  • Add the basil, pasta and cooking water to the sauce and stir gently until the pasta is well coated with the sauce. Serve with sliced chicken cutlets.
