This bowl really has everything I love: plenty of texture, freshness, but in particular a delicious sweet ginger sauce that goes perfectly with the crispy chicken!

Ingredients

Crispy Sesame Chicken

  • 1/2 cup (125 ml) flour
  • 2 eggs
  • 1 tbsp (15 ml) soy sauce
  • 1 tbsp (15 ml) lime juice
  • 2 tsp (10 ml) sambal oelek
  • 1 cup (250 ml) breadcrumbs
  • 1/2 cup (125 ml) sesame seeds
  • 1/2 tsp (2.5 ml) salt
  • 4 chicken cutlets

Sweet Ginger Sauce

  • 1 tbsp (15 ml) vegetable oil
  • 1 tbsp (15 ml) grated fresh ginger
  • 2 garlic cloves, minced
  • 1 tbsp (15 ml) soy sauce
  • 1 tbsp (15 ml) lime juice
  • 1 tbsp (15 ml) rice vinegar
  • 1 tsp (5 ml) sambal oelek
  • 1/3 cup (80 ml) honey
  • 1/4 cup (60 ml) water

Bowl

  • 3 cups (750 ml) cooked sushi rice
  • 2 avocados, quartered
  • 1/3 cup (80 ml) sliced green onions
  • 1/2 cup (125 ml) fresh cilantro

Crispy Sesame Chicken

  • In a soup bowl, mix eggs, lime and sriracha. In a second soup plate, combine breadcrumbs and salt. Dip chicken cutlets in egg mixture and drain well. Transfer to breadcrumbs and press to coat each cutlet.
  • In a large non-stick frying pan, heat olive oil over medium-high heat, and cook cutlets for 3 to 4 minutes on each side.

Sweet Ginger Sauce

  • In a nonstick skillet, heat oil over medium-high heat and cook ginger and garlic for 2 minutes, stirring often. Add remaining sauce ingredients and reduce for 6 to 8 minutes, stirring often.

  • Divide rice among 4 bowls. Add avocados, green onions, cilantro, crispy chicken and sweet honey-ginger sauce.
