Ingredients
  • 2 ripe bananas
  • 1 1/2 cups (240 g) toasted sesame seeds
  • 1/2 teaspoon (2.5 ml) cinnamon
  • 1/4 teaspoon (1.25 ml) salt
  • Vegetable oil
  • 1/3 cup (60 g) chocolate chips
  • Salt flakes for garnish

Preparation
  • Preheat oven to 350°F and place the rack in the center. Line a baking sheet with parchment paper.
  • In a large bowl, mash the bananas thoroughly. Add the toasted sesame seeds, cinnamon, and salt, and mix well.
  • Spray the parchment paper with oil to prevent the cookies from sticking. Form patties with about 2 tablespoons (30 ml) of the mixture onto the baking sheet. Bake for 20 minutes. Increase the temperature to 375°F and bake for an additional 5-7 minutes, or until golden brown. While the cookies are still hot, use the back of a tablespoon to make a small indentation in the center of each cookie. Allow the cookies to cool completely.
  • Place the chocolate chips in a small bowl and melt them in the microwave. Pour a little melted chocolate into the center of each cookie and let it set for 30 to 60 minutes at room temperature. Serve with salt flakes!
