Red Pesto Chickpea Sandwich

Ingredients
Red Pesto Chickpeas
- 1 cup (250 ml) jar oasted red peppers
- 1/2 cup (125 ml) coarsely chopped sun-dried tomatoes
- 3 tablespoons (45 mL) olive oil
- 2 tablespoons (30 ml) red wine vinegar
- 1 teaspoon (5 mL) honey
- 1 garlic clove, chopped
- 3/4 teaspoon (3.75 mL) salt
- Pepper, to taste
- 2 cans (398 ml each) chickpeas, well rinsed and drained
Sandwiches
- 4 to 8 slices of bread
- Mayonnaise
- A few lettuce leaves
- 2 tomatoes, sliced

Preparation
Red Pesto Chickpeas
- Place all the ingredients except the chickpeas in a blender and blend until semi-smooth.
- Place the chickpeas in a shallow dish and pour over the red pesto. Mix well.
- Using a fork, lightly mash the chickpeas.
Sandwiches
- Spread mayonnaise on the inside of the slices of bread. On half the slices of bread, add tomatoes, lettuce and the red pesto chickpea mixture. Close sandwiches.
Note : Double the pesto recipe for a simple and delicious pasta! Red pesto is also good as a base for vinaigrettes and as a spread for a chicken sandwich!
