Red Pesto Chickpea Sandwich
Ingredients

Red Pesto Chickpeas

  • 1 cup (250 ml) jar oasted red peppers
  • 1/2 cup (125 ml) coarsely chopped sun-dried tomatoes
  • 3 tablespoons (45 mL) olive oil
  • 2 tablespoons (30 ml) red wine vinegar
  • 1 teaspoon (5 mL) honey
  • 1 garlic clove, chopped
  • 3/4 teaspoon (3.75 mL) salt
  • Pepper, to taste
  • 2 cans (398 ml each) chickpeas, well rinsed and drained

Sandwiches

  • 4 to 8 slices of bread
  • Mayonnaise
  • A few lettuce leaves
  • 2 tomatoes, sliced

Preparation

Red Pesto Chickpeas

  • Place all the ingredients except the chickpeas in a blender and blend until semi-smooth.
  • Place the chickpeas in a shallow dish and pour over the red pesto. Mix well.
  • Using a fork, lightly mash the chickpeas.

Sandwiches

  • Spread mayonnaise on the inside of the slices of bread. On half the slices of bread, add tomatoes, lettuce and the red pesto chickpea mixture. Close sandwiches.

Note : Double the pesto recipe for a simple and delicious pasta! Red pesto is also good as a base for vinaigrettes and as a spread for a chicken sandwich!
