Protein Tiramisu Oatmeal

For those looking for protein-packed breakfasts, this recipe is for you! My tiramisu-style oatmeal is super easy to prepare ahead of time and adds a wow effect to your breakfasts! For protein, I made a maple tofu cream that goes perfectly with the coffee oatmeal!

Ingredients

Oatmeal

  • 1 cup (110 g) quick-cooking rolled oats
  • 1/2 cup (125 m) espresso
  • 1/2 cup (125 ml) plant milk
  • 3 tablespoons (45 ml) maple syrup
  • 1 tablespoons (15 ml) cocoa
  • 1 teaspoon (5 ml) vanilla
  • 1 pinch salt

Tofu Cream

  • 230 g semi-firm tofu (1/2 block)
  • 2 tablespoon (30 ml) lemon juice
  • 3 tablespoon (15 ml) maple syrup
  • 1/4 teaspoon (1.25 ml) salt

Preparation

Oatmeal

  • Mix all oatmeal ingredients in a bowl. Place in two jars and refrigerate for at least 1 hour, ideally overnight.

Tofu Cream

  • Place all cream of tofu ingredients in a narrow container. Using a hand blender, blend all ingredients until smooth.
  • Place the tofu cream on top of the porridge in both jars.

Note

1. For those who are less fond of tofu, I recommend mixing the oatmeal with the tofu cream before eating!
