Tropical Chia Pudding with Banana and Passion Fruit
This chia pudding is the perfect way to start your day! Its tropical flavours will take you to the beach for breakfast! What’s really great about this recipe is that you can prepare it ahead of time at the beginning of the week, so you’ll have breakfasts ready for those busy mornings!
P.S. I know that passion fruit is not always available and can be quite expensive, so you can totally replace it with another fruit of your choice!

Ingredients
Chia pudding
- 1 can (398 ml) coconut milk, well stirred
- 1 mashed banana
- 2 tablespoons (30 ml) lime juice
- 3 tablespoons (45 ml) honey
- 1 pinch salt
- 1/3 cup (55 g) chia seeds
- 3 passion fruits

Chia pudding
- In a bowl, combine all the chia pudding ingredients except the passion fruit.
- Leave to thicken in the fridge for 30 minutes.
- Serve with passion fruit and a little extra honey!
