Marinated Melon and Prosciutto Mini Skewers

Those who know me know that I love to host, no matter the occasion! I love creating menus and making my guests try out my new recipes! I guarantee that these fresh and delicious mini skewers passed the test with flying colours!

- Marinating time: 30 minutes
Ingredients
Marinated melon
- 2 tablespoons (30 mL) olive oil
- 3 tablespoons (45 mL) lemon juice
- 2 tablespoon (30 ml) white wine vinegar
- 1 garlic clove, chopped
- 2 tablespoons (30 ml) mint, finely chopped
- 1/2 teaspoon (2.5 mL) salt
- Pepper, to taste
- 1 melon, cubed or scooped with an ice-cream scoop
Mini Skewers
- 12 wooden skewers
- 200 g prosciutto

Marinated melon
- In a large bowl, combine all ingredients except melon.
- Add the melon and mix gently. Marinate for 30 minutes.
Mini Skewers
- Thread pieces of marinated cantaloupe and prosciutto alternately onto skewers. Serve!
