Marinated Melon and Prosciutto Mini Skewers
Ingredients

Marinated melon

  • 2 tablespoons (30 mL) olive oil
  • 3 tablespoons (45 mL) lemon juice
  • 2 tablespoon (30 ml) white wine vinegar
  • 1 garlic clove, chopped
  • 2 tablespoons (30 ml) mint, finely chopped
  • 1/2 teaspoon (2.5 mL) salt
  • Pepper, to taste
  • 1 melon, cubed or scooped with an ice-cream scoop

Mini Skewers

  • 12 wooden skewers
  • 200 g prosciutto

Preparation

Marinated melon

  • In a large bowl, combine all ingredients except melon.
  • Add the melon and mix gently. Marinate for 30 minutes.

Mini Skewers

  • Thread pieces of marinated cantaloupe and prosciutto alternately onto skewers. Serve!
