Ingredients

Lime Dressing

  • 3 tablespoons (45 ml) lime juice
  • 1 tablespoon (15 ml) rice vinegar
  • 2 teaspoons (10 ml) fish sauce
  • 1 tablespoon (15 ml) honey
  • 1 tablespoon (15 ml) sesame oil
  • 3 tablespoons (45 ml) vegetable oil
  • 1 clove garlic, minced
  • 1/2 teaspoon (2.5 ml) salt

Thai salad

  • 5 ataulfo mangoes, julienned (about 5 cups)
  • 2 English cucumbers, julienned
  • 3 cups (510 g) shredded chicken
  • 2 green onions, beveled
  • 1/2 cup (20 g) fresh mint chiffonade
  • 1/2 cup (75 g) coarsely chopped salted peanuts

Lime Dressing

  • In a small bowl, combine all dressing ingredients.

Thai salad

  • In a large bowl, toss all salad ingredients with lime dressing. Enjoy!
