Key Lime Pie Chia Pudding
With the start of the school year, I wanted to share this great breakfast recipe, which is perfect for meal prep! The flavour of key lime pie is fresh and ideal for getting your day off to a good start!

Ingredients
Chia Pudding
- 1 (398 ml) can of coconut milk (light or regular)
- 1/3 cup (80 ml) plant based milk
- Zest of 1 lime, well washed
- 1/4 cup (60 ml) lime juice
- 1/4 cup (60 ml) maple syrup
- 1 teaspoon (5 ml) vanilla
- 1 pinch salt
- 1/2 cup (125 ml) chia seeds (preferably white)
- 1/2 cup (50 g) quick oats
Toppings
- 1/2 cup (125 g) dairy-free vanilla yoghurt
- 1/2 cup (60 g) graham cracker crumbs
- Zest of 1 lime, well washed
- 4 lime slices (optional)

Chia Pudding
- In a bowl, combine the coconut milk, lime zest, lime juice, maple syrup, vanilla extract and salt. Then add the chia seeds and oats, mixing well. Refrigerate for at least two hours, or ideally overnight.
- Spoon into four bowls and serve with the garnishes.
