Greek Chicken Burger
These Greek-style chicken burgers will be on my table very often in the near future. The Mediterranean flavours and pickled tzatziki sauce make these burgers even more special! Not to mention the Kalamata olives in the chicken patties! Wow!

Ingredients
Tzatziki
- 1/4 cup (55 g) mayonnaise
- 1/3 cup (80 ml) vegetable or regular cream
- Zest of 1/2 lemon, well washed
- 2 tablespoons (30 ml) lemon juice
- 1 Lebanese cucumber, grated
- 1 dill pickle, thinly sliced
- 1/3 cup (15 g) chopped fresh mint
- 1 clove garlic, minced
- 1/2 teaspoon (2.5 ml) salt
- Pepper, to taste
Chicken Patties
- 600 g ground chicken
- 1/2 cup (125 ml) panko breadcrumbs
- 1 egg
- 1/4 cup (60 g) plain dairy-free Greek yoghurt, or regular yoghurt
- 1/2 cup (80 g) Kalamata olives, coarsely chopped
- 1/3 cup (15 g) chopped fresh mint
- 2 garlic cloves, minced
- 1 teaspoon (5 ml) dried oregano
- 1/2 teaspoon (2.5 ml) salt
- Pepper, to taste
Assembly
- 4 to 6 hamburger buns
- 2 Lebanese cucumber ribbons
- 1 tomato, thinly sliced
- 4 to 6 slices onion

Tzatziki
- Mix all the ingredients for the tzatziki together in a small bowl.
Chicken Patties
- Place all the ingredients for the chicken patties in a large bowl. Mix with your hands until everything is well blended. Shape the mixture into 4–6 patties.
- Heat the oil in a non-stick frying pan over a medium heat and cook the patties for about 5 minutes on each side.
Assembly
- Spread the inside of the buns with tzatziki. Place the patties on the bread and garnish with tomato, onion and cucumber. Enjoy!
