Ingredients
Whipped Feta Cheese
- 1 block of 225 g of plant-based or regular feta
- ½ block of medium-firm tofu, well-drained
- 1 tablespoon (15 ml) honey
- 2 tablespoons (30 ml) lemon juice
- 1 tablespoon (15 ml) olive oil
- 1/4 teaspoon (1.25 ml) salt
Assembly
- 15 homemade or store-bought croutons
- 2 teaspoons (10 ml) fresh thyme leaves
- A drizzle of honey
- Zest of 1 well-washed lemon
- Flake salt

Whipped Feta Cheese
- Blend all the ingredients for the whipped feta in a blender until the mixture is very smooth.
- If desired, transfer the mixture to a piping or Ziploc bag. Cut off the bottom corner of the bag.
Assembly
- Spread the whipped feta onto the crostini. Top the crostini with thyme, honey, lemon zest, and flaky salt.
