Roasted sweet potato and beef bowl with Cajun spices

Here’s my Cajun-spiced version, perfect for a simple, tasty and quick meal. I like to serve these bowls with a touch of mayo and a few slices of pickled jalapeños for added punch. This is exactly the kind of recipe I make for myself on weeknights when time is short, and it’s just as delicious as lunch the next day!

- 1/4 teaspoon (1.25 ml) salt
- Pepper, to taste
Mayo with Cajun spices
- 1/3 cup (70 g) light or regular mayonnaise
- 1 tablespoon (15 ml) white wine vinegar
- 1 teaspoon (5 ml) honey
- 1/2 teaspoon (2.5 ml) Cajun spices
- 1/2 teaspoon (2.5 ml) smoked paprika
- 1/4 teaspoon (1.25 ml) salt
Assembly
- 1 or 2 avocados, sliced
- Jalapeños marinated to taste
- Pickled onion (optional)
- 1/2 English cucumber, thinly sliced

Preparation
Roasted sweet potatoes
- Preheat oven to 425°F and place rack in center. Line a baking sheet with parchment paper.
- In a bowl, combine all sweet potato ingredients. Spread on baking sheet and bake for 25 minutes.
Beef
- In a large nonstick skillet, heat oil over medium-high heat and cook beef for 5 minutes, stirring only a few times. Add the Cajun spices, garlic, salt and pepper and cook for a further 3 minutes, stirring frequently.
Mayo with Cajun spices
- In a small bowl, combine all mayo ingredients.
Assembly
- Place roasted sweet potatoes, beef, avocado slices, pickled jalapenos, pickled onion and cucumber in bowls or soup plates. Serve with Cajun-spiced mayo.
