Preparation

Beignets feuilletés aux pommes

  • Preheat the oven to 375°F, with the rack in the middle. Line a baking tray with baking paper.
  • Slice the apples into 1/4 inch slices. You should end up with about 8 slices. Use a knife to cut out the centre of each slice to give it the shape of a doughnut.
  • Mix the sugar, cinnamon and cardamom together on a plate.
  • Dip each apple slice into the sugar mixture, making sure they are well coated.
  • Roll out the puff pastry on a clean, floured work surface. Cut the pastry into thin strips.
  • Wrap the apple slices in the pastry. You will need more than one strip of pastry for each slice.
  • Whisk the egg and vanilla together in a small bowl. Brush the doughnuts with the egg mixture. Sprinkle each doughnut with a little of the sugar mixture and bake for 15 to 18 minutes or until golden brown.

Note

  • It is important that the hole in the centre of the rounds is large enough.
If the puff pastry is too soft, store the strips in the fridge.
