Date Caramel and Granola Vegan Banana Bread

I don’t know about you, but I find there’s nothing more satisfying than a good, super moist banana bread. I don’t want to sound dramatic, but this one is completely divine and is probably the best I’ve baked to date…

There’s a date caramel in the center, granola on top for a little crunch, and it’s vegan!

Ingredients

Date Caramel

  • 2 cups (500 ml) pitted medjool dates
  • 1/3 cup (80 ml) Oatbox oat milk
  • 1/4 teaspoon (1.25 ml) salt

Banana Bread

  • 2 tablespoons (30 ml) ground flaxseed
  • 5 tablespoon (75 ml) water
  • 3 large ripe bananas, mashed
  • 1/3 cup (80 ml) Oatbox oat milk
  • 1/3 cup (80 ml) sunflower oil or other vegetable oil
  • 2 teaspoons (10 ml) vanilla
  • 2/3 cup (160 ml) brown sugar or coconut sugar
  • 2 cups (500 ml) flour
  • 1 teaspoon (5 ml) baking powder
  • 1 teaspoon (5 ml) baking soda
  • 1 teaspoon (5 ml) cinnamon
  • 1/4 teaspoon (1.25 ml) salt
  • 1/2 cup (125 ml) Oatbox granola with caramelized almonds

Preparation

Date Caramel

  • In a narrow container, submerge dates in boiling water. Allow dates to soften for 10 minutes. Drain well.
  • Add milk and salt. Using a blender attachment, blend until smooth.

Banana Bread

  • Preheat oven to 350°F and place rack in center. Grease a 10″ x 5″ loaf pan and line with parchment paper, letting it hang over the sides.
  • In a small bowl, combine flaxseed and water and leave to stand for 10 minutes. This mixture is intended to replace eggs.
  • In a large bowl, whisk flaxseed mixture with bananas, oat milk, sunflower oil, vanilla and brown sugar. Add the flour, baking powder, baking soda, cinnamon and salt and mix gently with a spatula until the dry ingredients are well incorporated.
  • Pour half the mixture into the mould and spread with a spatula. Spread date caramel over mixture. Add remaining mixture and spread gently with spatula. Top with Oatbox granola. Bake for 50 minutes, or until the tip of a knife inserted in the center of the loaf comes out clean.
