Flaky apple fritters
- Preheat oven to 375°F and place rack in center. Line a baking sheet with parchment paper.
- Slice apples into 1/4-inch rounds. You should get about 8 slices. Using a knife, remove the center of the round to give it a doughnut shape.
- Combine the sugar, cinnamon and cardamom in a bowl.
- Dip each apple slice into the sugar mixture, making sure to coat well.
- On a clean, floured work surface, roll out the puff pastry. Cut the puff pastry into thin strips.
- Wrap apple slices in puff pastry. More than one strip of puff pastry will be needed for each puck.
- In a small bowl, using a whisk, beat the egg with the vanilla. Brush doughnuts with egg mixture. Add a little sugar mixture to each doughnut and bake for 15 to 18 minutes, or until golden brown.
Note
- It is important to ensure that the hole in the center of the washers is large enough. If the puff pastry is too soft, store the puff pastry strips in the refrigerator.
