Lime Dressing
- 3 tablespoons (45 ml) lime juice
- 1 tablespoon (15 ml) rice vinegar
- 2 teaspoons (10 ml) fish sauce
- 1 tablespoon (15 ml) honey
- 1 tablespoon (15 ml) sesame oil
- 3 tablespoons (45 ml) vegetable oil
- 1 clove garlic, minced
- 1/2 teaspoon (2.5 ml) salt
Thai salad
- 5 ataulfo mangoes, julienned (about 5 cups)
- 2 English cucumbers, julienned
- 3 cups (510 g) shredded chicken
- 2 green onions, beveled
- 1/2 cup (20 g) fresh mint chiffonade
- 1/2 cup (75 g) coarsely chopped salted peanuts
