Corn Fritters and Lime Mayo
Ok. These corn fritters are one of my favorite summer recipes!
It’s no secret that I love corn. I’d eat it morning, noon and night… These corn fritters are right up my alley… And of course, I suggest serving them with a good lime and garlic mayonnaise!
- Servings: 4 to 6
- Preparation time: 10 minutes
- Cooking time: 15 minutes
Ingredients
Corn Fritters
- 3/4 cup (180 ml) flour
- 1 teaspoon (5 ml) baking powder
- 2 eggs
- 1/4 cup (60 ml) water
- 1 teaspoon (5 ml) sriracha hot sauce
- 1 garlic clove, chopped
- 1 teaspoon (5 mL) salt
- Pepper, to taste
- 4 cups (1 L) fresh, cooked or canned corn (about 5 cobs)
- 2 green onions, finely chopped
Lime Mayo
- 1/2 cup (125 ml) mayonnaise
- Zest of 1 lime
- 2 tablespoons (30 mL) lime juice
- 1 garlic clove, chopped
- 2 teaspoons (10 mL) honey
- 1/4 teaspoon (1.25 mL) salt

Corn Fritters
- In a large bowl, combine flour, baking powder, eggs, water, sriracha, garlic, salt and pepper. Add the corn, green onions and garlic and mix gently.
- In a large nonstick skillet, heat oil over medium-high heat. Using a 1/4 cup (60 ml) measuring cup, form fritters and drop them directly into the oil, one at a time. Cook 5 to 6 fritters at a time for about 3 minutes on each side, or until golden brown. Repeat for remaining mixture.
Lime Mayo
- In a small bowl, combine all mayo ingredients. Serve with fritters. Bon appetit!
