Almond Butter and Blueberry French Toast

Ingredients
Blueberry Jam
- 3 cups (750 mL) frozen blueberries
- Zest of 1 lime, well washed
- 2 tablespoons (30 mL) lime juice
- 3 tablespoons (45 mL) sugar
- 1 teaspoon (5 mL) vanilla
French toast
- 1 1/2 cups (375 mL) plant based milk
- 1 teaspoon (5 mL) vanilla
- 1 teaspoon (5 mL) cinnamon
- 3 eggs
- 8 slices of bread
- 1/3 cup (80 mL) almond butter
- Vegetable oil for cooking
Toppings
- Maple syrup

Preparation
Blueberry Jam
- In a small pan, bring all jam ingredients to a boil.
- Reduce heat to medium and simmer covered for 5 minutes.
- Remove the lid and simmer for another 6 to 8 minutes, stirring often. Reserve.
French toast
- In a shallow bowl, whisk together milk, vanilla, cinnamon and eggs.
- Spread some almond butter and some blueberry jam on 4 slices of bread and close the sandwiches withthe other slices of bread.
- Dip sandwiches in egg mixture and let them soak for about 1 minute on each side. Drain slightly.
- In a large non-stick skillet, heat oil over medium-high heat and cook the French toast sandwiches for about 1-2 minutes per side.
- Serve with maple syrup!
