Here’s my Cajun-spiced version, perfect for a simple, tasty and quick meal. I like to serve these bowls with a touch of mayo and a few slices of pickled jalapeños for added punch. Ingredients

Roasted sweet potatoes

  • 2 medium sweet potatoes, well washed and cubed
  • 2 tablespoon (30 ml) vegetable oil
  • 1 teaspoon (5 ml) Cajun spices
  • 1/2 teaspoon (2.5 ml) smoked paprika
  • 1 teaspoon (5 ml) paprika
  • 1/2 teaspoon (1.25 ml) salt

Beef

  • 1 tablespoon (15 ml) vegetable oil
  • 500 g lean ground beef
  • 2 teaspoon (10 ml) Cajun spices
  • 2 garlic cloves, minced
  • 1/4 teaspoon (1.25 ml) salt
  • Pepper, to taste

Mayo with Cajun spices

  • 1/3 cup (70 g) light or regular mayonnaise
  • 1 tablespoon (15 ml) white wine vinegar
  • 1 teaspoon (5 ml) honey
  • 1/2 teaspoon (2.5 ml) Cajun spices
  • 1/2 teaspoon (2.5 ml) smoked paprika
  • 1/4 teaspoon (1.25 ml) salt

Assembly

  • 1 or 2 avocados, sliced
  • Jalapeños marinated to taste
  • Pickled onion (optional)
  • 1/2 English cucumber, thinly sliced

Preparation

Roasted sweet potatoes

  • Preheat oven to 425°F and place rack in center. Line a baking sheet with parchment paper.
  • In a bowl, combine all sweet potato ingredients. Spread on baking sheet and bake for 25 minutes.

Beef

  • In a large nonstick skillet, heat oil over medium-high heat and cook beef for 5 minutes, stirring only a few times. Add the Cajun spices, garlic, salt and pepper and cook for a further 3 minutes, stirring frequently.

Mayo with Cajun spices

  • In a small bowl, combine all mayo ingredients.

Assembly

  • Place roasted sweet potatoes, beef, avocado slices, pickled jalapenos, pickled onion and cucumber in bowls or soup plates. Serve with Cajun-spiced mayo.
