White Beans with Chorizo
With fall just around the corner, I’m starting to crave some comfort food.
This recipe for white beans with chorizo was inspired by my trip to Spain.
I LOVE chorizo and you already know my love for white beans, so you’ll understand that this combination is simply divine!
What’s more, the recipe is SO easy to prepare, requiring only a few ingredients.
And just to convince you, it’s ready in 30 minutes top chrono!

Ingredients
White beans with chorizo
- 1 cup (175 g) diced dairy-free chorizo
- 2 tablespoons (30 ml) olive oil
- 1 white onion, thinly sliced
- 2 garlic cloves, minced
- 1 teaspoon (5 ml) herbes de Provence
- 1/2 teaspoon (3.75 ml) salt
- Pepper, to taste
- 4 cups (1 L) chicken or vegetable broth
- 2 bay leaves
- 1 can 540 ml white beans, well rinsed and drained

Preparation
White beans with chorizo
- In a large Dutch oven, cook chorizo over medium-high heat for 4 minutes.
Remove chorizo and set aside on a plate. - Add olive oil and onion and cook for 6 minutes, stirring often.
Add garlic, herbes de Provence, salt and pepper and continue cooking for 2 minutes.
Add the broth and bay leaves and simmer for 7 minutes.
Add the white beans and cook for a further 3 minutes. - Serve with a drizzle of olive oil!
