Spicy Vegan Ramen Noodles with Garlic and Sausage
These ramen noodles are the perfect dinner for a busy night! They are spicy, tasty and quick to make. I’m using plant based sausageshere, but this pasta will also be delicious with regular ones.

Ingredients
- 4 vegan hot Italian sausages (I use Beyond Sausage here)
- 3 tablespoons (45 mL) vegetable oil
- 2 cups (500 mL) cherry tomatoes
- 1 red chili or jalapeño pepper, seeded, coarsely chopped
- 2 cloves of garlic, chopped
- 1/4 cup (60 mL) finely chopped cilantro with stems
- 1 tablespoon (15 mL) lime juice
- 1 tablespoon (15 mL) honey
- 1/2 teaspoon (2.5 mL) salt
- Pepper, to taste
- 300 g ramen noodles of your choice
- 1 cup (250 mL) cooking water
- 1/2 cup (125 mL) coarsely chopped fresh cilantro (for garnish)

Preparation
- In a large non-stick skillet heated over medium-high heat, add sausages and break up with a wooden spoon. Cook for 3 minutes, stirring often.
- Add oil and cook tomatoes covered for 5 minutes, stirring often. Add chili, garlic and cilantro and cook for another 3 minutes, stirring often. Add lime juice, honey, salt and pepper and stir.
- In a large pot of boiling salted water, cook the pasta according to the time indicated on the package. Remove 1 cup (250 mL) of pasta cooking water. Drain the pasta and place in the sauce. Add the cooking water and mix gently. Serve with cilantro.
