Ingredients

Air Fryer Chicken Skewers

  • 1/3 cup (80 ml) plain, dairy-free yogurt
  • 2 tablespoons (30 ml) lemon juice
  • 3 garlic cloves, chopped
  • 1 tablespoon (15 ml) grated fresh ginger
  • 2 teaspoon (10 ml) garam masala
  • 1/2 teaspoon (2.5 ml) turmeric
  • 1 teaspoon (5 ml) chili powder
  • 1 teaspoon (5 ml) ground coriander
  • 1 teaspoon (5 ml) salt
  • 700 g boneless, skinless chicken thighs, cubed
  • 8 wooden skewers

Lemon Yogurt Sauce

  • 1/3 cup (80 ml) plain, dairy-free yogurt
  • Zest of 1 well-washed lemon
  • 2 tablespoons (30 ml) lemon juice
  • 1 small garlic clove, minced
  • 1 teaspoon (5 ml) honey
  • 1/2 teaspoon (2.5 ml) salt
  • Pepper, to taste

Bowl

  • 2 cups (500 ml) cooked rice of your choice
  • Curly lettuce
  • 4 Lebanese cucumbers, thinly sliced
  • Pickled onions (optional)

Preparation

Air Fryer Chicken Skewers

  • In a bowl, combine all ingredients for the brochettes. Add the chicken thighs and mix gently. Marinate for 30 minutes in the refrigerator.
  • Thread chicken pieces onto skewers.
  • Place the skewers in the Air Fryer basket, taking care not to overload it. Cook in the Air Fryer at 400°F for 13 to 16 minutes (all Air Fryers are different), turning halfway through cooking. Repeat for all skewers.

Lemon Yogurt Sauce

  • In a small bowl, mix all sauce ingredients.

Bowl

  • In 4 bowls, place rice, lettuce, chicken skewers, cucumbers and pickled onions. Serve with the lemon and yogourt sauce.
