Strawberry and Cucumber Salad with Creamy Avocado Sauce

Ingredients
Creamy avocado dressing
- 1 avocado
- 1/3 cup (80 mL) plain, dairy-free yogurt
- 3 tablespoons (45 mL) lime juice
- 2 teaspoons (10 mL) honey or maple syrup
- 1/4 cup (60 mL) coarsely chopped fresh mint
- 1/4 cup (60 mL) coarsely chopped fresh chives
- 1/2 teaspoon (2.5 mL) salt
Salad
- 3 cups (750 mL) strawberries, quartered
- 2 cups (500 mL) cherry tomatoes, cut in half
- 1 English cucumber, diced
- Zest of 1 lime
- 1 tablespoon (15 mL) lime juice
- 2 tablespoons (30 mL) olive oil
- 1/2 teaspoon (2.5 mL) salt
- Pepper, to taste
Toppings
- 1/2 teaspoon (2.5 mL) hot pepper flakes
- 2 tablespoons (30 mL) finely chopped fresh chives
- Fillet of olive oil
- Fillet of honey

Preparation
Creamy avocado dressing
- In a narrow container, place all ingredients for the creamy avocado sauce.
- Using a hand blender, blend until very smooth. Reserve.
Salad
- In a large bowl, combine all salad ingredients.
- In a large plate, spread the creamy avocado sauce and add the salad on top.
- Garnish with hot pepper flakes, chives, a drizzle of olive oil and a drizzle of honey!
