Strawberry and Cucumber Salad with Creamy Avocado Sauce
Ingredients

Creamy avocado dressing

  • 1 avocado
  • 1/3 cup (80 mL) plain, dairy-free yogurt
  • 3 tablespoons (45 mL) lime juice
  • 2 teaspoons (10 mL) honey or maple syrup
  • 1/4 cup (60 mL) coarsely chopped fresh mint
  • 1/4 cup (60 mL) coarsely chopped fresh chives
  • 1/2 teaspoon (2.5 mL) salt

Salad

 

  • 3 cups (750 mL) strawberries, quartered
  • 2 cups (500 mL) cherry tomatoes, cut in half
  • 1 English cucumber, diced
  • Zest of 1 lime
  • 1 tablespoon (15 mL) lime juice
  • 2 tablespoons (30 mL) olive oil
  • 1/2 teaspoon (2.5 mL) salt
  • Pepper, to taste

Toppings

  • 1/2 teaspoon (2.5 mL) hot pepper flakes
  • 2 tablespoons (30 mL) finely chopped fresh chives
  • Fillet of olive oil
  • Fillet of honey

Preparation

Creamy avocado dressing

  • In a narrow container, place all ingredients for the creamy avocado sauce.
  • Using a hand blender, blend until very smooth. Reserve.

Salad

  • In a large bowl, combine all salad ingredients.
  • In a large plate, spread the creamy avocado sauce and add the salad on top.
  • Garnish with hot pepper flakes, chives, a drizzle of olive oil and a drizzle of honey!
