Puff Pastry with Peaches and Basil
I recently discovered puff pastry at the grocery store (I don’t know why it took me so long) and wow, am I a fan!!! It’s so easy to cook! I know I could come up with a recipe for homemade dough, but I’ll be completely honest with you, don’t expect that from me. Pastry isn’t really my thing, but if you have a good recipe, I encourage you to make it with the combo of the century: peach and basil. This blend of flavours is simply divine, we want basil on EVERY bite! It really is the perfect summer dessert!

Ingredients
Peach pie
- 4 cups (535 g) sliced peaches
- 1/4 cup (50 g) sugar
- 2 tablespoon (30 ml) cornstarch
- 1 pinch salt
- 2 teaspoon (10 ml) vanilla extract
- 1 tablespoon (15 ml) lime juice
- 200 g commercial puff pastry, thawed
- 1 egg
- 1 tablespoon (15 ml) plant milk
- 1 tablespoon (15 ml) raw sugar
- Zest of 1 lime, well washed
- 1/2 cup (20 g) chopped basil

Preparation
Peach pie
- Preheat oven to 400°F and place rack in center. Line a baking sheet with parchment paper.
- In a bowl, gently toss peaches with sugar, cornstarch, salt, vanilla extract and lime juice.
- On a lightly floured work surface, roll out the dough into a 24 x 32 cm rectangle. Transfer the dough to the baking sheet.
- Place the peaches in the center of the pastry, leaving 2.5 cm of space on each side of the tart. Fold the edges of the tart over the peach mixture.
- In a small bowl, whisk together egg and milk. Brush the edges of the tart with the egg mixture and sprinkle with sugar. Bake for 25 to 30 minutes, or until golden brown. Garnish with basil and lime zest!
Note
- For the photo, I decided to use basil leaves, but I really advise you to chisel them to get some on every bite! The peach-basil combo is absolutely crazy!
