Passion Fruit Bars

A trip to the south, that’s what passion fruit means to me. As soon as you smell the fragrant scent of this fruit, it’s like teleporting to a tropical country. This fruit makes me so happy and brings back so many memories of my travels, I thought I’d make a dessert in its honour. These passion fruit bars will bring a lot of sunshine into your day, I promise!

Ingredients

Shortbread Base Style

  • 1/2 cup (110 g) room temperature vegetable butter
  • 1/4 cup (50 g) white sugar
  • 1 cup (140 g) flour
  • 1/4 tsp (1.25 ml) salt

Passion Fruit Filling

  • 1 cup (210 g) white sugar
  • 2 tablespoons (30 ml) flour
  • 1/2 cup (125 ml) passion fruit juice (see note)
  • 3 room temperature eggs

Toppings

  • Zest of 1 lime
  • Pulp of 2 passion fruits (optional)

Shortbread Base Style

  • Preheat the oven to 350°F and line an 8″ x 8″ baking tray with parchment paper.
  • Place all the base ingredients in a large bowl. Using an electric mixer, blend all the ingredients together for a few seconds. Pour the mixture into the tin and press down with your hands to form an even layer in the bottom of the tin. Bake for 20 minutes. Lovers of lemon bars must try this passion fruit version, which will take you on a journey with every bite!

Passion Fruit Filling

  • Whisk the sugar and flour together in a large bowl. Add the passion fruit juice and eggs and whisk again until smooth and lump-free. Reduce the oven temperature to 325°F. Pour the mixture into the crust and bake for a further 20 to 25 minutes, or until the centre is firm and won’t jiggle.
  • Allow to cool completely. When completely cooled, refrigerate for at least 2 hours before serving with toppings.

Note

  • Passion fruit juice (or puree) is not the easiest ingredient to find, but I guarantee it’s worth the hunt. I found mine at Aubut in Montreal in the frozen fruit section, but I saw that Guilde Culinaire also sells some. It’s not cheap, but it’s a very large amount! I can’t wait to start making cocktails with it! There’s also this one that I think would do the trick: passion fruit and pear juice.
