No-Bake Cookie Dough Bars
- 1/2 cup (125 ml) almond or peanut butter
- 1/4 cup (60 ml) melted coconut oil or non-dairy margarine
- 1/4 cup (60 ml) maple syrup
- 1 teaspoon (5 ml) vanilla
- 1 3/4 cups (430 ml) almond powder
- 1/2 teaspoon (2.5 ml) salt
- 1 teaspoon (5 ml) pumpkin pie spice
- 1/4 cup (60 ml) dairy-free chocolate chips + 1 cup (250 ml)

No-Bake Cookie Dough Bars
- In a bowl, combine peanut butter, coconut oil, maple syrup and vanilla. Add almond powder, salt, spices and 1/4 cup (60 ml) chocolate chips and mix well.
- Line a cookie sheet with parchment paper and roll out cookie dough into a rectangle.
- In microwave, melt 1 cup (250 ml) chocolate chips and spread over cookie dough.
- Place tray in freezer for at least 45 minutes. Slice into pieces and serve with a sprinkling of fleur de sel.
