Say hello to your new favorite pesto recipe! I really wonder why I didn’t think to add green olives to my pesto before today…. I can’t live without it now!

Green Olive Pesto Pasta
Ingredients

Green olive pesto

  • 1/2 cup (125 mL) pitted green olives
  • 1 1/2 cups (375 mL) basil
  • 1/2 cup (125 mL) coarsely chopped parsley
  • 2 cloves of garlic, chopped
  • 3 tablespoons (45 mL) toasted pine nuts
  • 3 tablespoons (30 mL) olive oil
  • 2 tablespoons (30 mL) lemon juice
  • 2 tablespoons (30 mL) water
  • 2 teaspoons (10 mL) honey
  • 1/2 teaspoon (2.5 mL) hot pepper flakes
  • 1/2 teaspoon (2.5 mL) salt
  • Pepper, to taste

Pasta

  • 340 g of spaghetti
  • 2/3 cup (160 mL) cooking water
  • 1/3 cup (80 mL) coarsely chopped parsley
  • 1/4 cup (60 mL) coarsely chopped pitted green olives

Preparation

Green olive pesto

  • Place all pesto ingredients in a blender and blend until smooth. Reserve.

Pasta

  • In a large pot of boiling salted water, cook the pasta according to the time indicated on the package. Remove 2/3 cup (160 mL) of pasta cooking water. Drain the pasta.
  • In the same pot, mix the pasta with the pesto and the cooking water. Serve with parsley and olives.
