As a huge fan of cabbage, I had to try the “dirty cabbage” trend! This viral recipe draws inspiration from Cajun rice, a classic Louisiana dish, but puts cabbage front and center.
 
My version combines ground beef and sausage with plenty of cabbage, bell peppers, and Cajun spices. Everything simmers together in a single pot to create a hearty, comforting, slightly spicy dish. It’s easy to make, full of flavor, and perfect for weeknight dinners when the weather starts to cool down!
 
As far as I’m concerned, this trend gets my thumbs up!

  • Don’t worry if your pot seems too full when you add the cabbage. It will shrink significantly as it cooks. Cover the pot for a few minutes, then stir once the cabbage starts to wilt.
  • The level of spiciness varies greatly from one Cajun spice blend to another. Taste yours before adding more, especially if your sausages are spicy.
  • For slightly crunchy cabbage, check for doneness after 15 minutes. If you prefer it to be very tender and melt-in-your-mouth, let it simmer for a few more minutes.

Ingredients
  • 2 tablespoons (30 ml) olive oil
  • 1 chopped yellow onion
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 garlic cloves, chopped
  • 2 teaspoons (10 ml) Cajun seasoning
  • 1 teaspoon (5 ml) salt
  • 600 g ground beef
  • 2 casing-less sausages of your choice
  • 1 tablespoon (15 ml) tomato paste
  • 1 medium green cabbage, coarsely chopped
  • 1 cup (250 ml) no-salt-added chicken or vegetable broth
  • 2 teaspoons (10 ml) Worcestershire sauce (optional)
  • Pepper, to taste
  • 1 cup (40 g) coarsely chopped fresh parsley (optional)

Preparation
  • Heat the olive oil in a large pot over medium heat. Cook the onion and bell peppers for 4 minutes, stirring often. Add the garlic, Cajun seasoning, and salt. Cook for another two minutes.
  • Increase the heat to medium-high. Add the ground beef and sausages and break up the meat with a wooden spoon. Cook for four minutes, stirring occasionally. Add the tomato paste and cook for one minute.
  • Reduce the heat to medium, then add the cabbage, broth, Worcestershire sauce, and pepper. Cover the pot and simmer for 15 to 20 minutes or until the cabbage is tender. Stir well, then serve with fresh parsley.
