Dairy-Free Strawberry Tiramisu
My favorite time of year has finally arrived: strawberry season! This fruit inspires me enormously for both sweet and savoury recipes. Strawberries add a delicate tartness and sweetness and makes any dish a thousand times prettier! This dessert is sweet, fragrant and fresh all at once. This is my version of strawberry tiramisu, without dairy products and with a chai tea and rum syrup. The perfect dessert to make for dinner with friends, brunch or just to treat yourself.

Ingredients
Dairy-free mascarpone
- 1 300g block silken tofu
- 1 1/2 cups (375 ml) cashews, soaked in boiling water for 20 minutes
- 1/4 cup (60 ml) lemon juice
- 1/4 cup (60 ml) maple syrup
- 1 teaspoon (5 ml) vanilla
- 1/4 teaspoon (1.25 ml) salt
Chai tea and rum syrup
- 2/3 cup (180 ml) water
- 2/3 cup (180 ml) maple syrup
- 1/4 cup (60 ml) rum
- 1 teaspoon (5 ml) vanilla
- 3 chai tea bags
Strawberry Tiramisu
- 200-250 g dairy-free ladyfingers
- 1/2 cup (125 ml) strawberry jam
- 2 cups (500 ml) sliced strawberries
- Freeze-dried strawberry powder (optional)

Preparation
Dairy-free mascarpone
- In a blender, blend all ingredients until super-smooth. Pour the mixture into a container and refrigerate for 20 minutes.
Chai tea and rum syrup
- In a small pan, bring the water, maple syrup, rum and vanilla to the boil. Turn off the heat and place the tea bags in the syrup. Leave to infuse for 15 minutes.
Strawberry Tiramisu
- Pour the syrup into a large soup plate. Dip half the ladyfingers in the syrup and place in the bottom of an 11 x 8-inch baking pan. Break cookies as needed.
- Spread half the dairy-free mascarpone over the ladyfingers. Spread with strawberry jam and top with 1 1/2 cups (375 ml) strawberries.
- Dip the second half of the ladyfingers in the syrup and place on top of the strawberries. Spread with remaining mascarpone and refrigerate for at least 3 hours or overnight.
- Serve with remaining strawberries and freeze-dried strawberries.
