Crispy olives with Air Fryer
I have a real passion for olives and wanted to try an original recipe for using them in my fridge!
Here’s a recipe for Air Fryer Green Olives with Lemon Mayo! It’s SO good, I had trouble stopping, I could have eaten it for supper!

Ingredients
Olives in the Air Fryer
- 1/3 cup (40 g) flour
- 2 eggs
- 1 cup (80 g) panko breadcrumbs
- 1 1/2 c. teaspoon (7.5 ml) crushed fennel seeds
- 1 teaspoon (5 ml) oregano
- 1/4 teaspoon (1.25 ml) salt
- 1/4 teaspoon (1.25 ml) hot pepper flakes
- 1 1/2 cups (300 g) pitted green olives, drained
Lemon mayo
- 1/4 cup (55 g) mayonnaise or plain, dairy-free yogurt
- Zest of 1/2 lemon, well washed
- 1 tablespoon (15 ml) lemon juice
- 1 small clove garlic, minced
- 2 teaspoon (10 ml) honey or maple syrup
Toppings
- 2 tablespoons (30 ml) finely chopped fresh parsley
- Zest of 1/2 lemon

Preparation
Olives in the Air Fryer
- Place flour in first bowl. In a second bowl, beat the eggs. In a third bowl, mix the breadcrumbs with the fennel seeds, oregano, salt and hot pepper flakes.
- Place several olives in the bowl of flour and make sure they are well coated. Transfer to eggs before draining and transferring to breadcrumb mixture. Coat olives well with breadcrumbs and transfer to a plate. Repeat for all olives.
- Preheat Air Fryer to 400°F. Place olives in Air Fryer basket. Spray olives with oil. Cook in the Air Fryer for 8 to 10 minutes, stirring halfway through cooking.
Lemon mayo
- In a small bowl, combine all mayo ingredients. Serve with olives, parsley and lemon zest!
