I love to serve them on poultry, as a finishing touch on soup or pasta, and to enhance a dressing!

Ingredients

Rosemary and Clementine Salt

  • 2 tablespoons (30 ml) coarsely chopped fresh rosemary
  • Zest of 5 clementines, well washed
  • 1/2 cup (140 g) coarse salt

Spicy Clementine Salt

  • Zest of 6 clementines, well washed
  • 1/2 teaspoon (2.5 ml) hot pepper flakes (or more to taste)
  • 1/2 cup (140 g) coarse salt

Preparation

Rosemary and Clementine Salt

  • Preheat oven to 175°F and place rack in center. Line a small baking sheet with parchment paper.
  • Place the rosemary on one side of the baking sheet and the clementine zest on the other. Bake for 20 to 25 minutes, or until ingredients are completely dehydrated. Leave to cool for 5 minutes.
  • Place the rosemary, clementine zest and salt in a mortar and pestle to a powder.

Spicy Clementine Salt
