Chickpea, Tomato and Pesto Veggie Sandwich
We can all agree that there’s nothing more disappointing than a veggie sandwich that lacks taste and texture. This one’s packed with fresh, tasty ingredients that will take your classic veggie sandwich to a whole new level! I recommend preparing your chickpea mixture at the beginning of the week, so that you only have to assemble the sandwich the same day!

Ingredients
Chickpea mix
- 1 can 540 ml chickpeas, rinsed and drained
- 3 tablespoons (45 ml) vegenaise sauce
- Zest of 1 well-washed lemon
- 1 tablespoon (15 ml) lemon juice
- 1 tablespoon (15 ml) hot sauce of your choice (or less to taste)
- 1/2 teaspoon (2.5 ml) salt
- Pepper, to taste
Sandwich
- 4 slices of bread
- 1 large tomato, sliced
- Pickled onions (optional, but so good!)
- 1 avocado, sliced
- A few lettuce leaves
- 2 tablespoons (30 ml) homemade or store-bought pesto
- 3 tablespoons (45 ml) mayonnaise

Preparation
Chickpea mix
- In a soup bowl, combine all the ingredients for the chickpea mixture. Using a pestle or fork, lightly crush the chickpeas.
Sandwich
- Spread mayonnaise and pesto on the inside of the loaves. Top two slices of bread with a mixture of chickpeas, tomato, pickled onion, avocado and lettuce. Close sandwiches with remaining bread slices. Enjoy!
