Caesar-Style Chicken Lettuce Wrap
I really had to make my version of this caesar salad style lettuce wrap, because it’s so my kind of recipe!!!! So here it is, it’s the perfect lunch, and it’s mega satisfying, even if it’s in lettuce, I promise!

Ingredients
Caesar Dressing
- 1/3 cup (80 ml) mayonnaise or plain dairy-free yogurt
- 4 c. teaspoons (20 ml) lemon juice
- 1 teaspoon (5 ml) soy sauce
- 2 teaspoons (10 ml) Dijon mustard
- 1 tablespoons (15 ml) finely chopped capers
- 2 teaspoons (10 ml) nutritional yeast
- 1 clove garlic, minced
- Honey drizzle
- 1/4 c. tea (1.25 ml salt)
- Pepper, to taste
Lettuce Wraps
- 6 large iceberg lettuce leaves
- 1 cup (250 ml) store-bought or homemade sliced cooked chicken (about 2 small chicken breasts)
- 1 avocado, sliced
- 1 cup (250 ml) homemade or store-bought croutons
- 1/4 cup (60 ml) red onion, thinly sliced
- Grated vegan Parmesan cheese (optional)

Caesar Dressing
- In a small bowl, combine all sauce ingredients.
Lettuce Wraps
- On two large pieces of parchment paper, layer 3 lettuce leaves, followed by chicken slices, Caesar sauce, avocado, croutons, more Caesar sauce, red onion and vegan parmesan.
- Like a tortilla wrap, fold the ends of the lettuce leaves towards the center and roll tightly to form a wrap. Wrap in parchment paper in the same way, so that the wrap holds together better. Enjoy!
