Caesar Pasta Salad
Introducing my new favourite pasta salad! This creamy, Caesar-style pasta salad is simply delicious. Even better, it’s quick and easy to make, and it keeps well in the fridge!

Ingredients
Caesar Dressing
- 1/2 cup (115 g) mayonnaise
- Zest of 1 well-washed lemon
- 3 tablespoons (45 ml) lemon juice
- 1 tablespoon (15 ml) Dijon mustard
- 1 tablespoon (15 ml) coarsely chopped capers
- 1/4 cup (25 g) vegetable or regular Parmesan cheese
- 1 clove garlic, minced
- 1 teaspoon (5 ml) honey
- 1 teaspoon (5 ml) Worcestershire sauce
- 1/2 teaspoon (2.5 ml) salt
- 1/2 teaspoon (2.5 ml) hot pepper flakes (optional)
- Pepper, to taste (I recommend plenty!)
Pasta Salad
- 3 cups (90 g) kale, coarsely chopped
- 400 g cooked and cooled short pasta
- 1 can 540 ml chickpeas, rinsed and drained
- 1 avocado, cubed
- 1/2 cup (15 g) basil leaves
- 1/3 cup (25 g) toasted Panko breadcrumbs for garnish

Caesar Dressing

- Place all the dressing ingredients at the bottom of a salad bowl.
Pasta Salad

- Place all the salad ingredients, except the panko breadcrumbs, in a salad bowl and gently toss with the dressing. Garnish with Panko breadcrumbs.
