Introducing my new favourite pasta salad! This creamy, Caesar-style pasta salad is simply delicious. Even better, it’s quick and easy to make, and it keeps well in the fridge!

Caesar Pasta Salad
Ingredients

Caesar Dressing

  • 1/2 cup (115 g) mayonnaise
  • Zest of 1 well-washed lemon
  • 3 tablespoons (45 ml) lemon juice
  • 1 tablespoon (15 ml) Dijon mustard
  • 1 tablespoon (15 ml) coarsely chopped capers
  • 1/4 cup (25 g) vegetable or regular Parmesan cheese
  • 1 clove garlic, minced
  • 1 teaspoon (5 ml) honey
  • 1 teaspoon (5 ml) Worcestershire sauce
  • 1/2 teaspoon (2.5 ml) salt
  • 1/2 teaspoon (2.5 ml) hot pepper flakes (optional)
  • Pepper, to taste (I recommend plenty!)

Pasta Salad

  • 3 cups (90 g) kale, coarsely chopped
  • 400 g cooked and cooled short pasta
  • 1 can 540 ml chickpeas, rinsed and drained
  • 1 avocado, cubed
  • 1/2 cup (15 g) basil leaves
  • 1/3 cup (25 g) toasted Panko breadcrumbs for garnish

Preparation

Caesar Dressing

    • Place all the dressing ingredients at the bottom of a salad bowl.

Pasta Salad

    • Place all the salad ingredients, except the panko breadcrumbs, in a salad bowl and gently toss with the dressing. Garnish with Panko breadcrumbs.
