Broccoli Fritters with Garlic and Basil Mayo
In my family, fritters are always a big hit. Simple to make and fun to eat, they are perfect for a dinner with friends, but also for a weeknight dinner. However, I have to admit that my favorite part of this recipe is the basil and garlic mayonnaise!

Ingredients
Broccoli Fritters
- 4 cups (1 L) finely chopped broccoli florets
- 3 green onions, finely chopped
- 1 tablespoon (15 mL) grated ginger
- 2 eggs
- 1 tablespoon (15 mL) sriracha
- 1/2 cup (125 mL) flour
- 1 teaspoon (5 mL) crushed coriander seeds
- 3/4 teaspoon (3.75 mL) salt
- Pepper, to taste
Garlic and basil mayo
- 2/3 cup (160 mL) mayo
- 1 garlic clove, chopped
- 1/4 cup (60 mL) finely chopped basil
- 2 tablespoons (30 mL) lemon juice
- 2 teaspoons (10 mL) maple syrup
- 1/4 teaspoon (1.25 mL) salt
- Pepper, to taste

Preparation
Broccoli Fritters
- Preheat oven to 400°F and line a sheet pan with parchment paper.
- In a large bowl, mix all the ingredients for the fritters. Using an ice cream scoop, form 1/4 cup fritters, pressing mixture well together and place sheet pan.
- Brush the top of the fritters with a little oil and cook for 15 minutes, turning them over gently halfway through cooking. Let cool for a few minutes.
Garlic and basil mayo
- In a small bowl, combine all mayo ingredients. Serve with broccoli fritters.
