Basil Whipped Tofu Crostinis

I love serving crostinis as an appetizer! Everyone loves them, and it’s the perfect opportunity to get creative with the toppings. This appetizer recipe idea is easy, tasty and super fresh! You couldn’t even tell that the main ingredient is tofu. I made them for my friends recently and it was a great success! Give them a try!

Ingredients

Croutons

  • 1 baguette, sliced
  • 2 tablespoons (30 ml) olive oil
  • 1/2 teaspoon (2.5 ml) salt

Basil Whipped Tofu

  • 1 block of semi-firm tofu
  • 2 cups (500 ml) fresh basil leaves
  • 2 cups (500 ml) fresh spinach
  • 1 clove garlic, minced
  • 3 tablespoons (45 ml) lemon juice
  • 2 tablespoons (30 ml) olive oil
  • 2 teaspoons (10 ml) honey
  • 1 teaspoon (5 ml) salt
  • Pepper, to taste

Toppings

  • Olive oil
  • Zest of 1 well-washed lemon

Croutons

  • Preheat oven to 375°F and place rack in center. Line a baking sheet with parchment paper and place the baguette slices on top. Drizzle with olive oil and sprinkle with salt. Bake for 8 to 10 minutes or until golden brown.

Basil Whipped Tofu

  • Place all the whipped tofu ingredients in a blender and blend until very smooth. Transfer the mixture to a ziploc bag, making sure to remove as much air as possible. Refrigerate for at least 30 minutes.
  • Make an incision in one end of the bottom of the bag and spread the whipped tofu over the cooled croutons. Serve with a drizzle of olive oil and lemon zest.
