A Comforting and Festive Vegetarian Christmas Menu!

Here’s my vegetarian and dairy-free Christmas menu:

Bites

  • Warm Olives: THE easiest appetizer recipe! It’s always a big hit and what’s fantastic about this recipe is that it’s a two-in-one: the olives are tasty and the oil in which they’ve been cooking is succulent and perfect for dipping into good slices of bread!

 

  • Pink Mimosa Eggs: If you want to impress your guests without breaking the bank, this recipe is a MUST! The beet gives a wow effect and takes mimosa eggs to another level. I’ll definitely be making this recipe again and again!

 

  • Roasted Garlic Baba Ganoush: This Middle Eastern dip is flavourful, fragrant and has a dreamy texture! The addition of roasted garlic is a revelation for me, I really encourage you to try this!!!

Side Dish

  • Maple and Harissa Caramelized Carrots: In my opinion, a Christmas menu is incomplete without a grilled vegetable as a side dish. This caramelized carrots recipe really needs to be on your table this holiday season, you won’t regret it! I served them with whipped dairy-free feta to add a little creaminess, but that’s optional! But don’t neglect the toppings!

Mains

  • Vegan Zucchini Involtinis: A few years ago, my mother made an eggplant involtini recipe for the first K pour Katrine cookbook, and it’s probably my favorite recipe from the book! I’ve taken inspiration from this delicious vegan dish to concoct my version made with zucchini to make it quicker! It’s comforting and the final result is really impressive! The perfect dish to put at the center of the table!

 

  • Vegan Pot Pie with Squash and Lentils: This recipe is probably the one I’m most proud of! When I cook vegan meals, I always try to make them look as appetizing and satisfying as a meat dish. Since the theme of my menu was comfort food, I absolutely had to prepare a good vegetarian pot pie recipe! I think I’ve succeeded in this challenge, and I can’t wait to hear from you!

 

  • Whole Roasted Cauliflower with Red Pepper Cream: It seems like I say this about every recipe, but this whole cauliflower is so pretty and impressive, all your guests will be thrilled to celebrate around this vegetable!!!! The little extra: tofu cream with roasted red peppers. It adds texture, flavours and protein to the dish! Oh and don’t forget the apple salsa that makes all the difference. 

Dessert

  • Vegan Ginger and Caramelized Apple Cheesecake: This dessert is clearly my favorite recipe on the menu. I’m SO happy with the result! Especially for me, who doesn’t cook many desserts, this was a feat! I guarantee that everyone will love it. The ginger cookies make all the difference, and the caramelized apples in the cheesecake filling : WOW!
