Creamy Dill Pickle Pasta Salad
WARNING! This salad is VERY addictive! As a proud pickle fan, it was my duty to create a recipe that reflected my passion. So here it is, my creamy pasta salad with pickles, the perfect accompaniment to dinners with friends/date nights/girls nights/solo nights, in short, any occasion is a good one to enjoy this delicious salad.

Yes, it’s easy to prepare in advance. Store it in the refrigerator and stir it before serving. To liven up the texture, you can add a little mayonnaise or a drizzle of brine.
Ingredients
Pasta Salad
- 1/2 cup (125 ml) mayonnaise
- 2 tablespoons (30 ml) pickle brine (pickle juice)
- 1 tablespoon (15 ml) white wine vinegar
- 1 teaspoon (5 ml) yellow mustard
- 1 teaspoon (5 ml) honey
- 1/2 teaspoon (2.5 ml) salt
- Pepper, to taste (I like to use a LOT)
- 400 g short pastry of your choice, cooked and cooled
- 3/4 cup (180 ml) finely chopped dill pickles
- 1/2 cup (125 ml) coarsely chopped fresh dill
- 3 tablespoons (45 ml) finely chopped red onion
- 125 g pancetta, pan-fried
- 1/3 cup (80 ml) homemade croutons(see recipe) (optional)

Pasta Salad
- In a large salad bowl, mix mayonnaise, pickle brine, white wine vinegar, mustard, honey, salt and pepper.
- Add remaining ingredients except croutons and toss until all ingredients are well coated with creamy dressing. Garnish with croutons.
