Baked Tostones (Fried Plantains)

Tostones, a typical West Indies dish, are fried plantains often served with a creamy sauce or ketchup! I decided to make an oven-baked version for you, since I’m not a fan of deep-frying. They taste just as good and cause less trouble! I suggest serving them with a mayonnaise of typical Caribbean spices and lime. It really is the perfect accompaniment for entertaining and getting into a tropical mood!

 

Plantains can be found in most grocery stores. It’s important to take the green ones.

Ingredients

Tostones

  • 3 large green plantains, peeled and cut into 1-inch-thick slices
  • 3 tablespoons (45 ml) vegetable oil + 2 tablespoons (30 ml)
  • 1 teaspoon (5 ml) smoked paprika
  • 1/4 teaspoon (1.25 ml) cayenne pepper
  • 3/4 teaspoon (3.75 ml) salt

Lime and spices mayo

  • 1/3 cup (80 ml) mayonnaise
  • 1 tablespoon (15 ml) water
  • 2 tablespoons (30 ml) lime juice
  • 2 teaspoons (10 ml) honey
  • 1 clove garlic, minced
  • 1/2 teaspoon (2.5 ml) turmeric
  • 1/2 teaspoon (2.5 ml) ground coriander
  • 1/4 teaspoon (1.25 ml) cumin
  • 1 teaspoon (5 ml) smoked paprika
  • 1/2 teaspoon (2.5 ml) cayenne pepper
  • 1/4 teaspoon (1.25 ml) salt

Preparation

Tostones

  • Preheat oven to 425°F and place rack in center. Line a baking sheet with parchment paper.
  • In a bowl, combine plantain slices, oil, paprika and salt.
  • Transfer to the baking sheet and bake for 12 minutes. Remove the baking tray from the oven and place on a heat-resistant surface.
  • Using the bottom of a cup or glass, mash slightly the plantain pieces. Brush the tostones with the remaining oil and bake for a further 5-10 minutes, or until golden brown.

Lime and spices mayo

  • In a small bowl, combine all mayonnaise ingredients. Serve with tostones.
