Cucumber Salad with Grapes and Zaatar
This recipe is a sign to start putting grapes in your salads!!! They make all the difference, especially in this cucumber salad!
I wanted to create a refreshing, simple and extra tasty salad and I think I succeeded. Also, I’ve had a bit of an obsession with zaatar lately and you’ll see, it takes the dressing to another level!

Ingredients
Lemon Yogurt
- 2/3 cup (160 ml) dairy-free yogurt
- Zest of 1/2 lemon
- 1 tablespoon (15 mL) lemon juice
- 1/4 teaspoon (1.25 mL) salt
Zaatar Dressing
- 1/4 cup (60 mL) olive oil
- Zest of 1 lemon
- 3 tablespoons (45 mL) lemon juice
- 2 teaspoons (10 mL) honey
- 2 teaspoons (10 ml) zaatar
- 3/4 teaspoon (3.75 mL) salt
- 1 garlic clove, chopped
- Pepper, to taste
Cucumber Salad
- 5 cups (1.25 L) cubed Lebanese cucumbers (about 10 cucumbers)
- 2 cups (500 ml) green grapes, halved
- 1/3 cup (80 ml) coarsely chopped mint
- 1/3 cup (80 ml) coarsely chopped walnuts or pumpkin seeds

- In a small bowl, combine all yogurt ingredients.
Zaatar Dressing
- In a small bowl, combine all dressing ingredients.
Cucumber Salad
- In a large plate, spread the lemon yogurt.
- Add cucumbers, grapes, mint and walnuts and drizzle with zaatar vinaigrette.
