Let me tell you, this salad is a huge favourite! It’s fresh, colourful, nutritious and bursting with summer flavours. The combination of juicy tomatoes, sweet strawberries, Kalamata olives and fresh oregano creates a dish that tastes like a holiday, and the white beans make it filling enough to serve as a complete meal.
 
I love making it for weekday lunches, but it’s also perfect for barbecues, picnics or entertaining. And adding the croutons right before serving is the little touch that makes all the difference!

Ingredients
  • 1 x 540 ml can of white beans, thoroughly rinsed and drained
  • 2 tomatoes, cut into half-moons
  • 1 1/2 cups (225 g) cherry tomatoes, cut in half
  • 1 cup (150 g) strawberries, cut into quarters
  • 1/2 cup (80 g) pitted Kalamata olives
  • 1 French shallot, finely chopped
  • 3 tablespoons (45 ml) fresh oregano leaves
  • 3 tablespoons (45 ml) olive oil
  • 3 tablespoons (45 ml) red wine vinegar
  • 2 teaspoons (10 ml) maple syrup
  • 1 small clove of garlic, minced (optional)
  • 1 teaspoon (5 ml) crushed fennel seeds
  • 1/2 teaspoon (2.5 ml) ground coriander seeds
  • 1/2 teaspoon (2.5 ml) salt
  • Pepper, to taste
  • 1 1/2 cups (90 g) of homemade or shop-bought croutons
