Ingredients

white beans

  • 2 tablespoon (30 ml) olive oil
  • 3 small leeks, cut into 1 cm slices
  • 3 garlic cloves, chopped
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) crushed fennel seeds
  • 1/2 teaspoon (2.5 ml) salt
  • 1/4 cup (60 ml) white wine
  • 2 cans 540 ml white beans, well rinsed and drained
  • 1 cup (250 ml) salt-reduced vegetable broth
  • 1 cup (250 ml) vegetable or regular cream
  • 2 teaspoon (10 ml) nutritional yeast
  • 1 teaspoon (5 ml) honey
  • 3 tablespoon (45 ml) lemon juice
  • Pepper, to taste

Grilled asparagus

  • 1 tablespoon (15 ml) olive oil
  • 1 bunch asparagus, washed and trimmed
  • 1 pinch salt

Toppings

  • 1/3 cup (15 g) coarsely chopped parsley
  • Zest of 1 well-washed lemon

Creamy Zucchini White Beans

  • In a large Dutch oven, heat the oil over medium heat and cook the leeks for 6 minutes, stirring occasionally. Add the garlic, dried oregano, fennel seeds and salt and cook for a further 4 minutes.
  • Deglaze with white wine and continue cooking for 2 minutes. Add the white beans, stock, cream, baking powder and honey and stir well. Add lemon juice and pepper and stir again gently.

Grilled asparagus

  • In a nonstick skillet, heat oil over medium-high heat and grill asparagus for 5 minutes, turning only a few times. Serve the asparagus with the white bean casserole and remaining toppings.
