Mini pavlovas with passion fruit

Here’s a great dessert idea for entertaining! These mini pavlovas are simple to make and so cute! It’s the kind of dessert that impresses without being complicated. The outside is crunchy and the inside slightly melting. I like to serve them with fruit of my choice, depending on the season!

If you have any passion fruit curd left over, don’t throw it away! Enjoy it in a bowl of yogurt, on a slice of toast or on pancakes. It’s the kind of topping that enhances desserts and breakfasts alike!

Ingredients

Meringues

  • 3 egg whites, room temperature
  • 1 pinch salt
  • 3/4 cup (160 g) sugar
  • 1 teaspoon (5 ml) cornstarch
  • 1 teaspoon (5 ml) lemon juice

Passion fruit curd

  • 1/2 cup (125 ml) passion fruit juice
  • 4 egg yolks
  • 3/4 cup (160 g) white sugar
  • 1/2 cup (110 g) dairy-free butter

Toppings

  • 1/3 cup (50 g) blueberries
Preparation

Passion fruit curd

  • In a saucepan off the heat, whisk together the passion fruit juice, egg yolks and sugar until smooth.
  • Cook over medium heat, stirring with a whisk, for 4 to 6 minutes, or until thickened.
  • Remove from heat and add butter. Whisk until butter has completely melted.
  • Transfer to a bowl and cover with plastic wrap, making sure there’s no air between the curd and the wrap. Refrigerate for at least 40 minutes.

Meringues

  • Preheat oven to 250°F and place rack in center. Line a baking sheet with parchment paper.
  • In a small bowl, combine cornstarch and lemon juice.
  • In a large bowl, beat egg whites with salt until frothy. Add sugar, 1 tbsp (15 ml) at a time, continuing to beat, until stiff, glossy peaks form.
  • Using a spatula, gently fold in the cornstarch mixture.
  • Using a spoon, shape 6 meringue balls on the baking sheet, making sure they are evenly spaced. Make a hollow in the center of each ball.
  • Bake for 55 minutes, or until the meringue nests are dry. Turn off the oven and leave to dry for 1 hour, leaving the oven door ajar with a wooden spoon.
  • Create small cavities in the pavlovas and garnish with passion fruit curd and a few blueberries.

Note

  • Passion fruit juice is pretty hard to come by, but it can be done! But if you don’t feel like going to the trouble, simply make a lemon version using the same amount of lemon juice as passion fruit juice.
