I think I have a real obsession with dips… Especially with this one!

Indeed, the toasted sesame takes this dip to another level! I also find it really fun to use all kinds of legumes to make my dips! Here, the edamame adds a superb texture!

Toasted Sesame Edamame Dip
Ingredients

Edamame Dip

  • 1 1/2 cups (375 ml) frozen edamame, thawed
  • 1 avocado
  • 2 green onions, coarsely chopped
  • 1/2 cup (125 ml) coarsely chopped fresh coriander (or basil)
  • 2 tablespoons (30 ml) toasted sesame seeds
  • 1/4 cup (60 mL) olive oil
  • 1/4 cup (60 ml) lime juice
  • 2 teaspoons (10 mL) honey
  • 3/4 teaspoon (3.75 mL) salt
  • Pepper, to taste

Toppings

  • 1/2 avocado, cubed
  • 1 tablespoon (15 ml) sesame seeds
  • Drizzle of olive oil
  • Salt and pepper
  • Choice of toasted pitas or crackers

Edamame Dip

  • Place all dip ingredients in a blender and blend until smooth.
  • Serve with garnishes.
