Spanish Tortilla with Roasted Pepper Salsa

Spanish tortilla or tortilla de patata was one of my favorite tapas in Spain! Here’s my version, quite similar to the original, but with a fun little topping! It’s simple and really delicious!

It’s a recipe that requires a little more technique, so I’ve done my best to explain how to make it at home!

Spanish Tortilla with Roasted Pepper Salsa
Ingredients

Spanish Tortilla

  • 1/2 cup (125 ml) olive oil
  • 4 yellow-peeled Quebec potatoes, peeled and very thinly sliced
  • 1 large Spanish onion, thinly sliced
  • 3/4 teaspoon (3.75 ml) salt + 1/2 teaspoon (2.5 ml)
  • 1 clove garlic, minced
  • 1/2 teaspoon (2.5 ml) smoked paprika
  • 6 eggs
  • Pepper, to taste

Roasted Pepper Salsa

  • 1/2 cup (125 ml) coarsely chopped roasted peppers
  • 3 tablespoons (45 ml) finely chopped parsley
  • 2 teaspoons (10 ml) red wine vinegar
  • Olive oil drizzle
  • Pepper, to taste

Preparation

Spanish Tortilla

  • In a 10-inch nonstick skillet, heat olive oil over medium heat and cook potatoes and onion with 3/4 tsp (3.75 ml) salt for 15 minutes, stirring a few times, or until the tip of a knife fits easily into a piece of potato.
  • Add the garlic and smoked paprika and cook for a further 4 minutes, stirring occasionally.
  • In a large bowl, beat eggs with 1/2 tsp (2.5 ml) salt and pepper.
  • Drain the potato and onion mixture over a bowl to catch the olive oil. Transfer the potato and onion mixture to the bowl with the beaten eggs and mix gently.
  • In the same non-stick pan, add a little of the reserved olive oil and heat over medium-high heat. Pour the mixture into the pan and cook for 5 minutes without stirring.
  • Using a spatula, gently loosen the edges of the tortilla. Put on oven mitts. Place a large plate on top of the skillet and turn the skillet over to invert the tortilla. Add a little more olive oil to the pan and slide the tortilla into the pan, cooked side up. Cook for a further 4-5 minutes. Carefully transfer the tortilla to a plate.

Roasted Pepper Salsa

  • In a small bowl, combine all salsa ingredients. Enjoy with the Spanish tortilla!
