Garlic, Lemon and Pea Dipping Oil
Here I am again with another dipping oil recipe! This time, it’s a really fresh version with peas, lemon and garlic. And, of course, it contains plenty of fresh herbs!
Serve with slices of fresh bread and my friend Rose’s ‘ranch water‘ cocktail.

Garlic, Lemon and Pea Dipping Oil
Ingredients
  • 1/3 cup (80 ml) extra-virgin olive oil
  • 1/4 cup (40 g) frozen peas, thawed, coarsely chopped
  • 3 tablespoons (45 ml) finely chopped fresh parsley (or other fresh herbs)
  • 2 tablespoons (30 ml) finely chopped fresh dill (or other fresh herbs)
  • 1/2 teaspoon crushed fennel seeds
  • 1 small clove garlic, minced
  • Zest of 1 well-washed lemon
  • 2 tablespoons (30 ml) lemon juice
  • 1/2 teaspoon (2.5 ml) salt
  • Hot pepper flakes to taste

  • Mix all the ingredients together in a shallow dish. Serve with good bread!
